Spinach Soup

This recipe for Spinach soup only takes a few ingredients, and in just 30 minutes, you can be enjoying this smooth, creamy savoury bowl of health and goodness!

Ingredients:

2 tbsp - Olive Oil

1 small Onion (diced)

142g - Baby Spinach

2 cups (180g) - Frozen Broccoli (or fresh and chopped)

2 medium-sized Potatoes (diced)

1/2 tbsp - Garlic

1/2 tbsp - Ginger

4 cups (990ml) - Vegetable Broth

1/2 cup (103ml) - Coconut Milk

Salt and Black Pepper (to taste)


Directions:

  1. Turn the stove burner to a medium heat and add the olive oil to a pot.

  2. Once the oil has begun to heat up, add the onions and sautee for 5 minutes.

  3. Next, add the baby spinach. Cover for a few minutes to allow the spinach time to begin wilting. Stir occasionally.

  4. Then, add the broccoli, potatoes, garlic and ginger. Stir to combine.

  5. Add the salt, pepper and broth. Stir and cover, allowing the mixture to simmer on a low-medium heat for 25 minutes.

  6. Next, either add the contents to a blender, or use an emulsion blender and blend until smooth.

  7. Add in the coconut milk and continue to cook for an additional 5 minutes.

  8. Serve hot. Enjoy!
