Asparagus Frittata

Did you know? Dishes like the Frittata have probably been around for centuries.The name comes from the Italian verb "friggere" which means to fry.

Other sources say that the word Frittata means something like a mess or even someone who is a bit nuts. hai fatto una frittata ,”which loosely translated means: you've made quite a mess.

The Frittata has often been called an Italian open faced omelette.


This version of the frittata is baked, and simple enough to make! Will you be making it for tomorrow morning?


Ingredients:

5-6 Mushrooms (sliced)

1 Leek (medium-sized, diced vertically)

5-8 Asparagus (chopped)

2 tbsp - Olive oil

1/2 - 3/4 cup (130-175ml) - Vegetable broth

8-10 Eggs

1/4 Cup (ml)- Almond Milk

Salt and Black Pepper (to taste)


Directions:

  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Chop and dice your leek, mushrooms and asparagus into small bite-sized pieces. Dice the leek into small matchsticks.

  3. In a frying pan, add the olive oil. Sautee the asparagus and leeks for 5 minutes.

  4. Add in the mushrooms and sauté once again for an additional 5 minutes.

  5. Pour in the broth and allow it to be soaked up or dried out. Approx. 5 minutes. Take off the heat and set aside until needed.

  6. In a medium-sized bowl, beat your eggs, salt, pepper and milk. Mix until completely combined.

  7. In a greased or sprayed 8 1/2" x 11" pan, evenly cover the bottom with the asparagus, leek and mushroom mixture.

  8. Next, pour over the egg mixture and bake for 20-25 minutes.

  9. Take out of the oven and allow 5 minutes for it to cool before cutting and serving. Enjoy!
