Chocolate Strawberry Protein Balls

Regardless of what you're doing this Valentine's Day, you need to make these delicious little protein balls!


Dipped in a dark chocolate and easily stored in the fridge for a late night snack or a mid afternoon pick-me-up!



Ingredients:

1 cup (80g) - Chocolate Whey Protein

4 tbsp (33g) - Coconut Flour

5-6 (85g) - Strawberries (fresh/frozen)

2 tsp - Ground Flaxseeds

1 tsp - Ground Cinnamon

Dipping:

2 bars - Dark Chocolate

1 tbsp - Coconut Oil


Directions:

  1. In a small plate or bowl, crush your strawberries until they are a pulp-like consistency. Small chunks are great.

  2. In a bowl, combine the whey protein, coconut flour, flax seeds and cinnamon. Whisk the ingredients together.

  3. Add in the strawberries and mix with a wooden spoon or spatula. Switch to your hands and mix the batter until all the whey protein in completely combined and you have a soft, sticky, thick batter.

  4. Wet your hands and scoop out approx. a tablespoon-size amount of batter to roll between your hands. Place on a parchment-lined cookie sheet.

  5. When finished, place the balls into the freezer for at least 20 minutes.

  6. Just before the time is up, break up your chocolate into a small microwaveable bowl.

  7. Add the coconut oil and place the bowl into the microwave for 3-5 30 second intervals, stirring each time until you have a smooth glossy mixture.

  8. Take the balls out of the freezer and dip each one in the chocolate and place them back onto the cookie sheet. Because they are frozen the chocolate will dry fairly quickly.

  9. Decorate with coconut shaving, sliced almonds, more chocolate or nothing. Enjoy!
