Peanut Butter and Banana Muffins

These peanut butter and banana muffins are made with a peanut powder from the company Flavored PB Co., who produce all natural and gluten free, flavoured peanut powder.


All you do, is add water, and you instantly have peanut butter, or you can bake it for a warm snack!


I really enjoyed trying out all the flavours that the company had, so it got me thinking about what else I could do with their products; hence the reason we now have these sweet little muffins


Each muffin contains about 188 calories and this recipe makes 12 small muffins. Feel free to freeze them, and that way you can enjoy them for a longer period of time! All right, let's get into the recipe!



Ingredients:

3 Ripe Bananas

1/2 Cup (120ml) - Almond Milk

1/4 Cup (52ml) - Coconut Oil

1/2 Cup (83g) - Coconut Sugar

1 Cup (150g) - All Purpose Flour

1 tsp - Ground Cinnamon

1 tsp - Salt

2 tsp - Baking Powder

1 tsp - Vanilla Extract

1/2 Cup (50g) - Almond Flour

1/2 Cup (58g) - Peanut Powder ("Salted Caramel Crunch")


Directions:

  1. Preheat the oven to 350 degrees.

  2. In a bowl, peel and mash the bananas until fairly smooth. Add in your coconut sugar, vanilla paste or extract, your room temperature almond milk, and coconut oil. Mix until fully combined.

  3. In a separate bowl, mix together your flour, peanut powder, salt, ground cinnamon, and baking powder.

  4. Combine your dry ingredients with your wet ingredients and mix just until combined.

  5. Line a 12 muffin try with muffin liners and pour the batter into each section.

  6. Bake for 20-25 minutes.
