Low-fat Cream Cheese and Strawberry Stuffed French Toast

If you are in the mood to truly treat yourself, than this is the French toast recipe for you! To someone who doesn't make a lot of homemade dishes, this recipe may look like a lot of work, but that's just an illusion. You can have these in under fifteen minutes with very little work! In my opinion, these actually taste best after they've had a few minutes to cool down, but you may fine them at their tastiest right out of the frying pan; try both and let me know! And don't just limit yourself to strawberries! The final product might be a little thicker, but try out blueberries, raspberries, blackberries, or even kiwi! There are so many options! Happy eating!


Ingredients:

1/2 block (140g) Low-fat cream cheese (soft or room temperature)

1/2 tsp - Vanilla extract

2 tbsp - Powdered sugar

3-4 eggs

1/4 tsp - Ground nutmeg

1 tsp - Ground cinnamon

2 tbsp - Granulated sugar

3 tbsp (35g) - Almond milk

4-6 slices - Bread of your choice

3-6 strawberries


Directions:

  1. In a small bowl with a whisk or hand mixer, combine the cream cheese, vanilla extract and powdered sugar. Set aside.

  2. Crack the eggs into a bowl. Add the nutmeg, cinnamon, sugar and almond milk. Beat until fully combined.

  3. Set the stove to a medium heat and lightly grease a frying pan.

  4. Take two pieces of bread and spread a light layer of the cream cheese mixture onto each. Place slices of strawberries onto one piece and cover them with the remaining slice of bread, cream cheese layer side down.

  5. Dip one side into the egg batter for 3 seconds, then turn it over for another 3 seconds. Place into the hot frying pan.

  6. Each side should take about 3-5 minutes. You are looking for a nice golden brown to slightly darker brown colour.

  7. Serve as is, or in slices with maple syrup and more fruit on the side. Enjoy!
