Gingerbread Brownies

Traditional brownies are popular all over the world. But sometimes, you want want to feel like you're indulging while eating healthier. Those healthy brownies sometimes go a little too far and end up taking all the joy out of enjoying a great brownie!


Well, hopefully, when you try these brownies, you'll agree that you still get a lot of joy from eating these!


They're made from almond flour and pureed dates, so they aren't as sweet as your regular brownies, but with the ginger and the way these melt in your mouth, I really don't think you'll care much about tradition! And in my opinion, these are better the day after they come out of the oven! Let's get started!


Ingredients:

1/2 (150g) - Pitted Dates (blended in a food processor)

3 Eggs

1 tbsp - Fancy Molasses

1/2 cup (105g) - Coconut Oil (melted)

2 tsp - Vanilla Paste

1 cup (210g) - Almond Milk

1/2 cup (45g) - Almond Flour

1/2 cup (40g) - Cocoa Powder

1 tbsp - Ground Ginger

1/4 tsp - Ground Cloves

1 tsp - Baking Soda

1/2 tsp - Baking Powder

1/2 tsp - Salt


Optional:

1/2 cup (g) - White Chocolate Chips


Directions:

  1. If you are using pitted dates, you'll need to put them in a food processor and blend them until you have a thick puree.

  2. In a bowl. add the pureed dates and one egg. Using a hand or stand mixer, blend until combined. Add the remaining egg separately, mixing until incorporated after each addition.

  3. To the date mixture, add the molasses, vanilla paste and coconut milk. Mix until combined, then add the almond milk and mix again. Set aside

  4. In a separate smaller bowl, combine the almond flour, cocoa powder, ginger, cloves, baking soda, baking powder and salt.

  5. Add the dry ingredients to the wet ingredients and mix until combined, Don't forget to scrap down the sides and bottom of the bowl to ensure everything is fully incorporated.

  6. At this point, you can choose to add in the chocolate chips or leave them out.

  7. Pour the batter into a greased and parchment paper-lined 7x7 pan.

  8. Bake for 30 minutes. The brownies will sink a little once they come out of the oven. Allow at least another 30 minutes before cutting. Enjoy!
