Ginger Pear Muffins

According to the website, healthifyme.com, "Pears are a rich source of vitamin C minerals that work as a great antioxidant. Antioxidants help in stimulating the production of white blood cells, which are critical to the immune system. This ultimately makes your immune system stronger, allowing your body to ward off conditions like mild illnesses like flu, cold upset stomach, and more." Pears are incredible! And this recipe for ginger pear muffins is just as incredible in my books! Soft, moist, sweet, and fresh, these muffins are worth your time! Happy eating!


Ingredients:

3/4 cup (105g) - Brown sugar

1/3 cup (64g) - Canola oil

1 tsp - Vanilla extract

1 egg (or 1 tbsp - Ground flax seeds + 3 tbsp - Water)

1 cup (225g) - Almond milk

2 1/2 cups (230g) - All purpose flour

1 tsp - Baking soda

1/2 tsp - Baking powder

1 tsp - Ground ginger

1/2 tsp - Ground cinnamon

1/2 tsp - Salt

1 1/2 - 2 cups (300-330g) - Pear (peeled and chopped into small pieces)


Topping:

3/4 cup (94g) - All purpose flour

1/2 cup (113g) - Unsalted butter

1/2 cup (100g) - Brown sugar

1 tsp - Ground cinnamon

3/4 cup (68g) - Quick cook oats


Directions:

  1. Preheat your oven to 350 degrees.

  2. If you are doing the vegan version, mix your ground flax seeds and water now in a small bowl and set it aside for five minutes.

  3. In a bowl, combine the brown sugar, canola oil, vanilla extract and the egg. Blend together with a hand mixer.

  4. Gradually add in the almond milk and continue beating until all ingredients are fully incorporated.

  5. In larger bowl, sift the flour, baking soda, baking powder, salt and the spices.

  6. Pour the wet ingredients into the dry ingredients. Using a hand mixer or a spatula, mix until you have a thick, smooth, pale batter.

  7. Add the pears and mix just until incorporated.

  8. Using a spoon, pour into a lined muffin tray.

  9. In another bowl, combine the flour, butter, brown sugar and cinnamon. Use a fork to crush the butter into flour mixture until it begins to form clumps. Add the oats and continue to mix. When everything is combine and forming small clumps, it is ready!

  10. Sprinkle on top of muffins as much or as little as you want. Bake for 20-25 minutes or until a fork/toothpick comes out clean.

  11. Freeze any extra muffins you have and put any extra crumble in an air tight container to use at a later date.
