Summer Mocktails

Besides the orange and coconut drink that I obviously call a Creamsicle, I don't have names for any of the other of these delicious drinks. So, I'll leave that task up to you, as you try them, what names pop up in your mind?

The longest part of making these drinks, is making the concentrated syrup of the fruit. And most of that time is spent just waiting, so there's very little effort being made on your part! Who wants to work so hard when you just want to relax anyway, right?

These mocktails can be enjoyed by everyone at every function; dinners, parties, bbq, or just a quiet Sunday evening. The possibilities are endless, so let's get started!


Ingredients:

Rhubarb Concentrate--

5-6 Stalks of Rhubarb (diced)

3/4 cup - Raw Cane Sugar

5 Cloves

1/2 Lemon

1 tsp - Vanilla Extract

2-3 cups - Water


Blueberry Concentrate/Blackberry Concentrate--

2 cups - Blueberries/Blackberries (fresh or frozen)

1/4 cup - Sugar (depends on the sweetness of the fruit)

The juice of 1/2 Lemon

2 cups - Water


Strawberry Concentrate--

2 cups - Strawberries (fresh or frozen)

1/4 cup - Sugar (depends on the sweetness of the fruit)

1 tsp - Vanilla Extract

2-3 cups - Water


Kiwi Blend--

5 Kiwis

1/4 cup (45g) - Sugar (depends on the sweetness of the fruit)

1-1 1/2 cups (197-296g) - Water


Directions:

  1. For the Rhubarb, blueberries, blackberries and strawberries, pour all the ingredients for each fruit into a pot and simmer on low-medium heat for 30-45 minutes. Stir occasionally.

  2. Pour through a sieve and into a bowl. Use a spoon or spatula to squish as much juice through as possible. Pour into a mason jar and allow at least a half hour of cooling time before placing it in the fridge to cool completely.

  3. For the kiwi blend, peel and slice the kiwis. Place into a blender with the sugar and water. Blend until smooth.

  4. Pour the juice through a sieve and use a spoon or spatula to push through as much juice as possible without getting too many seeds in the process. Pour into a jar and place in the fridge to become cold.

  5. To prepare the mocktails, get your favourite glass. For the rhubarb mocktail, fill the glass 1/4 full with the rhubarb concentrate. Using a spoon in order not to upset the concentrate too much, pour in the sparkling water. I find sparkling water that has a little lime is really good!

  6. For the blueberry ginger mocktail, place ice into the glass. Fill the glass halfway with the concentrate. Add the ginger beer and mix. Sprinkle on a few blueberries for garnish.

  7. For the orange creamsicle, add a few cubes of ice to a blender. Pour in your coconut milk and orange juice and blend until smooth. Pour into your glass and serve.

  8. For the strawberry kiwi mocktail, pour in the kiwi concentrate first. Fill the glass a quarter of the way.

  9. Next, add the sparkling water almost to the top.

  10. Using a spoon, pour the strawberry concentrate into the glass. It should settle on top of the kiwi. Serve and enjoy!
