Coconut Lime Doughnuts

You may not be able to beat the heat with these treats, but you can certainly amp up your level of summertime enjoyment with them!


These baked coconut lime doughnuts offer up a cakey, light and tangy flavour that isn't too subtle or too overpowering. They are great for a quick snack or a happy little pick-me-up throughout the day.


They are best eaten fresh, but will last up to 3 or 4 days in the fridge in an airtight container or freezer bag.


This recipe makes 10 doughnuts.

Each doughnut offers: 312 calories, 17g of fat, 3.2g of protein and 39g of carbs.


Ingredients:

Doughnuts:

1/4 cup (50g) - Coconut Sugar

1/4 cup (52g) - Coconut Oil (melted)

3 tbsp - Applesauce (unsweetened)

1/2 cup (109g) - Coconut Milk

1 tsp - Vanilla Extract

Zest of 1 Lime

3 tbsp - Lime Juice

1 3/4 cups (208g) - Organic Pastry Flour

1 tsp - Baking Soda

1/2 tsp - Baking Powder

Pinch of Ground Nutmeg

Pinch of Salt


Icing:

1 cup (100g) - Icing Sugar

1 tsp - Coconut Oil (melted)

3 tsp - Lime Juice

Zest of 1 Lime (for garnish)

Coconut Flakes (for garnish)


Directions:

  1. Preheat your oven to 350°F.

  2. Lightly grease two doughnut moulds with spray or oil.

  3. In a large bowl combine the sugar, oil, applesauce, milk, vanilla extract, the zest and the juice from a lime. Mix together.

  4. Sift the dry ingredients (flour, baking powder, baking soda, nutmeg, and salt) into the same bowl.

  5. Using a whisk, combine until the flour is fully incorporated.

  6. Pour batter into a piping bag (or a freezer bag), and cut the tip. Squeezing from the top of the bag, pour the batter into the moulds.

  7. Bake for 12-15 minutes.

  8. When the doughnut are fully baked, remove from the oven and the moulds, and place them on a cooling rack.

  9. While the doughnut are cooling, combine the sugar, oil and the juice of half of a lime. Mix thoroughly. If the icing is still too thick, gradually add more lime juice until you have a consistency that resembles honey or molasses.

  10. Once the doughnuts have cooled, dip each one into the icing and sprinkle with lime zest and coconut flakes.
