Apple Cider Doughnuts

"You can’t buy happiness but you can buy donuts. And that’s kind of the same thing."


These apple cider doughnuts come out of the oven soft, chewy, and full of flavour! I make them a lot and then give them out as gifts, and they are always a hit!


I'm also really happy with the addition of the apple butter instead of regular butter as well. I feel it enhances the apple flavour without being overpowering.


And remember, the apple cider icing is totally optional, but if you feel like a, "treat yoself" kind of day, then go right ahead and dunk these in!

If they aren't all gone within the first day, they should last in the fridge for about 4-5 days in a tightly sealed container.

Ingredients:

2 cups (315g) - All Purpose Flour

1 tsp - Baking Soda

1/2 tsp - Baking Powder

1 tsp - Ground Cinnamon

1/2 tsp - Allspice

1/4 tsp - Ground Nutmeg

1/4 tsp - Salt

2 tbsp - Apple Butter

1 Large Egg

1/2 cup (70g) - Brown Sugar (packed)

1/2 cup (65g) - Coconut Sugar

1/2 cup (115g) - Almond Milk

1 cup (220g) - Apple Cider

1 tsp - Vanilla Paste


Optional Apple Cider Icing:

Icing Sugar

Apple Cider


Directions:

  1. Preheat the oven to 350 degrees.

  2. In a large bowl, add your flour, baking soda, baking powder, ground cinnamon, allspice, ground cloves, ground nutmeg and salt. Whisk until combined and set aside.

  3. In another bowl, add the egg, the two sugars, the apple butter, apple cider and almond milk. Whisk until combined, then add in the vanilla paste and whisk again.

  4. Create a well in the middle of the dry ingredients and add half of the wet to the dry. Whisk and add the remaining of the wet ingredients. Once fully combined, you should have a smooth caramel-coloured batter. Stop mixing.

  5. In two or three doughnut trays, pour your batter 3/4 of the way up each mold.

  6. Bake for 10-12 minutes. Cool on a wire rack.

  7. If you choose to ice your doughnuts, you can create the icing now.

  8. In a small bowl, add your icing sugar and apple cider and mix until smooth. For a thicker icing that will create a white glaze over your doughnuts, add less cider. For a thinner icing that will create more of a clear glaze, add more cider.

  9. Allow 30-40 minutes for the glaze to dry or eat right away! The choice is yours!
