White Hot Chocolate

“In my experience, clever food is not appreciated at Christmas. It makes the little ones cry and the old ones nervous.”

- Jane Grigson

I don't know about you, but Christmas is my absolute favourite holiday ever! Which is perfect, because winter is my favourite season as well! People think I'm crazy, but I really love the dark quiet mornings and how much friendlier people seem to become when we're all bundled up in -20 degree weather.

This recipe for white hot chocolate is ridiculously easy and will fill you with so much joy and comfort, you may want to do it the entire season long! And why not?

Ingredients:

1 cup - White chocolate wafers

2 cups - Almond milk

1 tbsp - Vanilla extract

Directions:

  1. Create a bain-marie ("double boiler") over a medium-low heat, and add the wafers.

  2. When the wafers have partially melted, begin to whisk while slowly adding in the milk.

  3. Add in the vanilla extract and continue to whisk.

  4. Continue stirring until the wafers have completely melted. Take off the heat and serve in individual mugs. Add some whipped cream and cinnamon for some added decadence!
