Ignis' Elegant Orange Cake

"I've come up with a new recipe!" - Ignis (Final Fantasy XV)



I am so excited to bring you this recipe! One of my absolute favourite video game series is Final Fantasy!

Ignis, one of the protagonists from Final Fantasy 15, has made a ton of great-looking food, and constantly comes up with new recipes. So I thought it would be cool to recapture at least one of his dishes in real life!

This recipe produces an incredibly moist (yes, I said it! lol) delicious, orange-flavoured loaf! Let's get baking people!



Ingredients:

2 cups (275g) - All Purpose Flour

1 tbsp - Baking Powder

1/4 tsp - Ground Cinnamon

A pinch of Salt

3 Eggs

1 tsp - Vanilla Extract

1 cup (170g) - Olive Oil

1/2 cup (110g) - Orange Juice

1 1/4 cup (260g) - Granulated Sugar

1/2 cup (120g) - Almond Milk

The zest of 1 Orange


Directions:

  1. Preheat the oven to 325 degrees

  2. In a large bowl, sift the dry ingredients; the flour, baking powder and cinnamon.

  3. In another bowl, combine your sugar, and the eggs. Whip with a hand blender, if you have it, until light, pale, and has increased in volume.

  4. Add the vanilla extract, the orange juice, almond milk, olive oil and the zest of one orange. Beat for a few seconds until combined.

  5. Gradually add the wet to the dry ingredients, mixing just until the flour is incorporated.

  6. Line you loaf pan with parchment paper and pour the batter in. Place in the oven and bake for60-70 minutes or until a toothpick comes out clean.

  7. Once cake comes out of the oven and has completely cooled, it is time to make the frosting.

  8. In a small bowl, combine the powdered sugar and orange juice. You'll want a consistency like molasses; thick but a little runny. Pour it all over the top and place the cake into the fridge to allow the frosting to dry.
