Honey Lemon Chicken

"When arguing with a chicken a grain of corn is always wrong."

Ingredients:

- 4-6 chicken breasts

- Salt, black pepper, paprika and dried parsley (to taste)

- 3 cloves of garlic

- 1 tbsp Ginger (pureed)

- 1 1/2 cups Vegetable broth

- 3tbsp Honey

- 2tbsp Soy Sauce

- Juice from 2 small lemons

- 1 1/2tbsp Cornstarch (mixed with a little water)


Directions:

1. Cut up the chicken breasts into small bite-sized cubes.

2. Put the chicken into a bowl with the salt, pepper, paprika and parsley. Mix until all the cubes are coated.

3. Fry on medium high heat in a frying pan with a little olive oil for 15 minutes or until cooked through.

4. Place the chicken on a plate and put the pan back on the heat.


Making the Sauce

5. In the same pan (you don't have to wash it!) Add the garlic and stir until it begins to brown, then add the ginger, broth, honey, soy sauce and lemon juice.

6. Boil on medium high heat for about 5 minutes, then add your cornstarch slurry. Mix quickly to incorporate.

7. Allow the sauce to simmer for a few minutes before adding the chicken back into the pan.

8. Completely coat the chicken and serve with your favourite carb and veggies.
