Dinner 4 Two! Baked Salmon and Peach and Mango Crumble

Here's an easy baked salmon recipe with a peach and mango crumble! If you've ever been afraid of cooking or baking fish, I think this will be a great little introduction for you! If you're pressed for time or ideas, this is also a great recipe! The salmon ends up juicy and flaky, and you'll love the burst of flavour from the crumble! Let's get started!


Ingredients:

Baked Salmon:

Salmon fillet

Olive oil

salt, black pepper and garlic powder (to taste)

Cooked rice

Steamed veggies


Peach Mango Crumble:

2 cans (450g) - Peaches

1 Mango (slied and chopped)

Half of 1/4 cup (50g) - Brown sugar

1/4 tsp - Nutmeg

1 cup (90g) - Rolled Oats (quick cook works great)

1 cup (115g) - All purpose Flour

90g - Butter (cold and cubed)

The other half of the 1/4 cup (50g) - Brown sugar


Directions:

  1. Preheat the oven to 350 degrees.

  2. Place a sheet of foil on a cookie sheet and place in the oven for 10 minutes.

  3. Wash two cups of rice in a pot. Once washed, add enough water to cover the rice. Approximately half an inch above rice level.

  4. Place on the stove and turn the heat to high. Cover.

  5. Once the rice begins to boil, immediately turn the heat down to very low until it is almost completely off.

  6. While the rice is cooking, clean your fillet. Then add the olive oil, salt, black pepper and garlic powder. Rub the seasonings into the fish making sure to coat both sides.

  7. Once the ten minutes is up, take the cookie sheet out of the oven, place the fish skin side down, and place it back into the oven for 12 minutes.

  8. In a separate pot, steam vegetables of your choice

  9. Everything should be finished within minutes of each other!

For the Crumble:

  1. In a bowl, mix together the peaches, mango, brown sugar and nutmeg.

  2. Place into ramekans or other oven safe bowls, and set aside.

  3. In another bowl, combine the flour, oats and the rest of the brown sugar.

  4. Add the cold and cubed butter and begin to mix with your hands. You should have a mixture that resembles a very wet sand. It should form small balls of mixture.

  5. Add the crumble mixture to the top of the ramekins.

  6. Place into the oven already set at 350 degrees, and bake for 30 minutes.

  7. The crumble will be extremely hot once they come out of the oven, so allow 15 minutes or more for cooling.

  8. Dinner is served!
