Watermelon Salsa

I'll keep this nice and simple, this is a fantastic side dish or on its own!

It's fresh, tangy, savoury and pairs well with the protein of your choosing!

It doesn't have to be bbq or grilled, so feel free to enjoy it anytime, nd the great thing about this particular recipe, is that it is customizable! Change up the ingredients a little in order to suit your preferences!


This recipe serves about 8-10, and in 1 serving, you'll find: 59 calories, 0.5g of fat, 1.7g of protein, and 14 calories.


Ingredients:

4 cups (760g) – Watermelon (diced)

1 Red Onion (diced)

2/3 cup (23g) – Cilantro leaves (roughly chopped)

½ cup (7g) – Mint Leaves (roughly chopped)

1-2 (56g) – Jalapenos (deseeded/diced)

2 (120g) – Mini Cucumbers (Or 1 regular English cucumber/diced)

1 (250g) – Yellow Zucchini (diced)

1 cup (150g) – Corn

The zest and juice of 1 Lime

The juice of ½ of an Orange

Salt and Black Pepper (to taste)


Directions:

  1. Slice a quarter off of the watermelon. Scoop out the insides of the larger portion in order to form a bowl.

  2. Dice the watermelon "flesh" into small cubes. Place in a large bowl and set aside.

  3. Slice the jalapenos length-wise and deseed. Chop into small pieces and add to the bowl.

  4. Chop and dice the onion, cilantro, mint, zucchini and cucumbers and add them to the bowl along with the corn.

  5. Zest the lime and add it to the bowl. Then, cut and juice the lime and half of an orange.

  6. Add salt and pepper to taste and mix everything together.

  7. Fill the watermelon "bowl" with the salsa, and serve.

  8. You can refrigerate the salsa for up to two days in an airtight container.
