Vegan Sweet Potato Spice Sauce

I'm going to keep this short and simple.

You are going to want to put this vegan sweet potato spice sauce on everything! It's so smooth, and flavourful and just enhances whatever you pair it with. Tofu, Chicken, Turkey, Fish! Let's get started!

Ingredients:

3 medium sized Sweet Potatoes

1-1 1/2 cups (224-360g) - Almond Milk

1 Can (398ml) - Coconut Milk

1 Onion (diced)

1/2 tsp - Ground Cinnamon

1/2 tsp - Ground Nutmeg

1/2 tsp - Ground Ginger

1/2 tsp - Black Pepper

1 tbsp - Salt


Directions:

  1. Peel the sweet potatoes and cut into medallions. Steam until soft and can easily be pierced with a fork.

  2. Place the sweet potatoes into a blender and add the coconut milk. Blend until smooth.

  3. Then add the onions, and continue to blend. Once smooth, pour the mixture out into a small pot.

  4. Turn the heat to medium, and add the spices. Mix with a whisk or wooden spoon.

  5. Gradually add the milk while stirring.

  6. Cover, turn the heat down to low and allow the sauce to simmer and thicken for approximately 45 minutes.

  7. When it is finished, you should have a smooth and a "thick soup"-like consistency.

  8. Serve with vegetables or your favourite protein!
