Vegan Sweet Potato Pie

You guys need to try this sweet potato pie recipe! I love it, and have made it numerous times since putting the recipe and video together! It cuts beautifully, tastes great and gets put together so imply and easily. All right, I am so excited for you to try this, so enough talking and happy eating!


Ingredients:

Crust:

1 cup (142g) - Whole Wheat Flour

1 cup (85g) - Oat Flour

1/2 cup (85g) - Olive Oil

3-5 tbsp - Cold Water


Filling:

3 med. (400g) - Sweet potatoes

3/4 cup (150g) - Coconut Milk

3/4 cup (190g) - Maple Syrup

1 tsp - Vanilla Extract

6 tbsp (57g) - Whole Wheat Flour

1/2 tsp - Salt

1 tsp - Ground Cinnamon

1/2 tsp - Ground Nutmeg

1/4 tsp - Ground Ginger


Directions:

  1. First, bake, steam or microwave your sweet potatoes.

  2. Preheat the oven to 350 degrees.

  3. In a small bowl, combine your flours and olive oil. Begin mixing.

  4. After the ingredients are slightly combined, add the cold water in tablespoon increments. Some people will only need 1-2 tablespoons, others may need 3 or more. You are looking for the mixture to start clumping together to create a dough.

  5. In your 9 inch pie pan press your dough down and push some of the dough up against the sides.

  6. Poke holes all over the dough with a fork and place into the oven for 5 minutes.

  7. While to crust is in the oven, place the peeled sweet potatoes, the coconut milk, the maple syrup and the vanilla extract into a food processor or blender. Mix until combined.

  8. Next, add in the whole wheat flour, the salt and the spices. Mix until combined.

  9. Take the crust out of the oven and pour the mixture in. Put it back into the oven for 40-50 minutes.

  10. Once the pie comes out, allow it to completely cool for at least an hour. Overnight in the fridge is ideal, but if you can't wait, then you can't wait!

  11. Finally, it's time to serve and enjoy!
