Vegan Spice Cake - Canadian Edition!

I am a proud Canadian, so I thought I would show off that pride by making not only a cake for the holiday, but make it vegan and delicious as well! It's more of a torte than a cake if I'm being honest, because it's a very low pastry. For, now, however, let's just stick to calling it a cake! And yes, it is a lot of ingredients, but don't get intimidated by that! It's still a recipe that is not difficult to put together.

There's not much to say about this cake other than, if I were to do it now, I would probably bake it in a square dish lol

Ingredients:

1 Cup - Almond Milk

1 tbsp - Apple Cider Vinegar

1 1/2 Cups - All-purpose Flour

1 Cup - White Sugar

1 tsp - baking soda

1 tsp - Baking Powder

1/2 tsp - Salt

1 tsp - Cinnamon

1 tsp - Ground Ginger

1/2 tsp - Nutmeg

1/3 Cup - Sunflower or Canola Oil

1/4 Cup - Water

1 tbsp - Lemon Juice

1 tbsp - Vanilla Extract


Topping:

1 Cup - Icing Sugar (powdered sugar)

2-4 tbsp - Lemon Juice

1/2 tsp - Vanilla Extract

Strawberries (diced)


Directions:

  1. Preheat your oven to 350 degrees.

  2. Lightly grease a cake pan or dish with butter, oil or a spray.

  3. In a small bowl, combine the almond milk and the vinegar. Set aside while you prepare the other ingredients.

  4. In a larger bowl, combine the flour, sugar, spices, baking soda, baking powder and salt. Whisk until combined.

  5. In a separate bowl, Whisk together your almond milk mixture, the oil, water, vanilla extract, and lemon juice.

  6. Add the wet ingredients to the dry ingredients and mix just until combined.

  7. Pour batter into your greased pan, and place into the oven. Bake for 35 minutes or until a fork comes out clean when you poke the middle of the cake.

  8. The icing is optional. If you choose use it, combine the icing sugar, extract and lemon juice to a small bowl. Mix together until you have a consistency that is not too thick but not runny.

  9. Once the cake has come out of the oven and has cooled, drizzle the icing on top. Arrange the strawberries however you like, and enjoy!
