Vegan Apple Spice Cake

Here's another spice cake to add to your repertoire! Simple, fast and delicious, I find that this particular apple spice cake goes really really well with a little ice-cream on top! And of course, it's better when served warm! Depending on how moist and chewy you want the cake, you can changed from two small apples, to three. Three small apples will give you a denser, chewier cake, but still incredibly delicious. Try the cake both ways and see what you like best! Happy eating!


Ingredients:

1 1/2 cups (190g) - All purpose flour

1/3 cup (67g) - Brown sugar

1/4 tsp - Salt

1 tsp - Baking powder

1/4 tsp - Baking soda

1 tsp - Cinnamon

1/4 tsp - Ground ginger

1/4 tsp - Ground cloves

1/4 tsp - Ground nutmeg

2-3 Apples (chopped)

1 tbsp - Ground flax seeds

3 tbsp - Water

3/4 cup (210g) - Applesauce


Directions:

  1. Preheat the oven to 350°f/175°C.

  2. Lightly grease a baking dish no larger than 8"x11". if you use something smaller, just remember that the baking time will be slightly longer.

  3. Prepare your "egg". In a small bowl or container, combine the ground flax seeds and water. Stir and set aside until needed.

  4. Prepare the apples by washing, peeling and chopping into small pieces. Set aside.

  5. In a large bowl, sift the flour, baking soda, brown sugar, baking powder, salt and the spices. Mix with a wooden spoon, then add the chopped apples. Mix until all the apple pieces are completely covered with the dry ingredients.

  6. In a separate smaller bowl, combine the applesauce and the "egg".

  7. Add the wet ingredients to the dry apple mixture. The batter will look very dry at first, but do not be tempted to add more liquids! This is a thick batter and the apples will add more moisture to the bake as it bakes.

  8. Mix until you have incorporated all the dry ingredients and pour into your greased pan or dish.

  9. Bake for 25-30 minutes. Poke a fork int he middle to check it is done. You should have a beautifully browned top with apples poking through the surface!

  10. When the cake comes out, allow it too cool for some time as it needs to settle or it may fall apart very easily when you try to cut a piece.

  11. Serve with some ice-cream or enjoy totally on its own!
