No Bake Power Punch Protein Balls

Nancy Waldeck, chef and dietitian at Thomas F. Chapman Family Cancer Wellness at Piedmont, had this to say about protein,


“It is important for individuals to consume protein every day. Daily protein intake plays a role in keeping your cells in good shape and should be part of your daily health maintenance plan.”


These protein balls are a quick and easy way to get in some much needed protein as well as some much needed energy when you hit that mid morning, mid-afternoon dip! Enjoy!


Ingredients:

1 scoop - Vanilla protein powder

1 cup - Oat flour

1/4 tsp - Cinnamon

4 tbsp. - Honey

5 tbsp - Almond butter

1/2 cup - Dried cranberries


Directions:

  1. In a large bowl, add in the oat flour, protein powder and cinnamon. If you don't have or can't find oat flour, you can make your own by blitzing quick cook oats in a food processor. Whisk the ingredients until combined.

  2. Once combined, add in the almond butter and the honey. Combined everything with a spoon. Once it becomes too difficult to use a spoon, switch over to your washed hands and continue to completely combine all the ingredients.

  3. Add the dried cranberries and continue mixing.

  4. Wash your hands and break off golf ball-sized pieces of the mixture. Roll into balls and place on a tray with parchment paper.

  5. Once you've rolled all of the mixture place in the fridge for at least one hour.

  6. They are ready to be eaten! They will last for a few days in a tightly sealed container.
