Korean Tofu Patties

There are many things that I love about Korea, however, the food has to be in my top 3 list! There's something about the food that says, "hi, I'm here to make you feel good." lol

Ignoring the many trends that have recently been popping up, at the heart of it, is a cuisine that sets out to serve a purpose besides simply being sustenance, and I am here for it!


Ingredients:

1/2 block - Tofu (firm)

1 tsp - Salt

1/2 tsp - Black Pepper

1 tbsp - Spring Onion (Chopped. I used dried parsley in the video)

1 Egg

1 Carrot

1/2 Onion


Approx. 32g Protein / 370 Calories


Directions:

  1. Using a clean dish towel or a cheese cloth, take half a block of the tofu and squeeze out as much water as you can.

  2. Put the crumbled tofu into a bowl and set aside.

  3. In a food processor, add the carrot, onion, and blend. Scoop out the contents into the bowl of tofu and mix together.

  4. Add the salt, pepper and spring onion to the mixture and mix thoroughly before add the egg.

  5. Once combined, scoop out a small portion and form a patty. Place in a pan set to medium/high heat with a few table spoons of olive oil.

  6. Gently flip the patties when they have a beautiful golden brown colour.

  7. Take out when brown on both sides and place on a plate with paper towels. The paper towels will soak up any remaining oil on the patties.

  8. Serve with rice, kimchi, vegetables, anything you want! I think these would go great with some greek yogourt as well!
