Black Bean Salad

I love a good recipe with a burst of colour in it! Don't you? I believe that half of our eating experience is done through our eyes! It's one thing to be good for you, but when it's good for you AND it looks beautiful, well, that's just a match made in Heaven!

All right, I'll stop gushing over this recipe and simply say that I really hope you enjoy it! Happy eating!


Ingredients:

1 can - Black Beans (drained and rinsed)

1 can - Corn (drained and rinsed)

1 Large tomato (chopped)

1 Large Green or Orange Bell Pepper (diced)

1/2 of a medium-sized Red Onion (diced)

1 Clove or 1 tbsp - Garlic (minced)

5-6 Green Onions (diced)

1/4 cup (45g) - Olive Oil

1/4 cup (50g) - White Wine Vinegar

The juice of 1 Lime

Salt and Pepper (to taste)


Directions:

  1. In a bowl, combine your black beans, corn, bell pepper, tomato, red onion, spring onion and garlic.

  2. Next, add your olive oil, white wine vinegar, salt, pepper and the lime juice.

  3. Using a spoon, mix until everything has been incorporated. And you're done! Get some nachos and eat away or add it as a side dish to your next meal!
